Helmet, sprayskirt, lifejacket, paddle. You usually don''t have to add boat to the mantra though I know a guy who forgot it once.
There's a good site, www.skirtfit.com which gives you sizing for sprayskirts based on boat type, or manufacturer sizing.
Helmets --- bicycle helmets are not appropriate whitewater head gear.
Paddles --- should be appropriately sized for the paddler. Feathers (or offsets) are a matter of personal preference. Current popular feather is probably 30 degrees, ten years ago 45 degree was normal and 20 years ago 90 degrees was common. Unless you're a playboater I wouldn't recommend a 0 degree. Common lengths nowadays are between 191 and 198 cm.
Lifejackets should be sized appropriately. There are several good manufacturers. I wouldn't recommend Burt Reynolds era, horseshoe collar type jacket.
