We've got a couple of ATX Inflatable SUP's which they don't sell any more. We also have a couple of 12 foot glass SUP's as well so we've done direct comparisons.
First thing, inflatables need to be highly inflated or they become pretty hard to handle. Even though it doesn't look like they bend much on the ground, if they're underinflated it becomes 3x harder to stay on. And the heavier you are, the higher you need to inflate them.
One downside to inflatables is they're generally thicker than glass and become a little harder to mount if you're in deep water, especially wearing a pfd. Glass boards are definitely easier to get underneath you.
Performance wise, when they're properly inflated our 10.5 foot inflatables don't seem any harder to paddle than our 12 footers, and they're almost fast and maneuverable.
Of course a quality inflatable will cost as much as a good solid board.
